Shortbread Cookie Recipe


As promised, I wanted to quick get this last post in for the week before I head out the door...I'm going on a mini get-away. Yep, I am quite excited. :) Just me. and the mr. :)

These shortbread cookies were a hit....I made mine teeny tiny and they were perfect for some little nibblin, but such a yummy buttery flavor!



Classic Shortbread Cookies:
1 cup (2 sticks) cold, unsalted butter cut into 1/2" pieces
1/2 cup sugar
1 tsp. salt
2 1/4 cup flour (may only need about 2 cup)
* Combine butter, sugar, and salt in mixer on low until butter combines with sugar but isn't perfectly smooth (1-2 minutes). Add flour (don't add all of it....I actually needed to add more butter to mine after I dumped the flour in because it got crumby, so you may only need the 2 cup of flour) on low scraping bowl down frequently until dough has just about pulled together. Don't overmix.
Refrigerate for an hour or so until dough is cool. Roll out big portions of dough on floured surface 1/4" thick. Bake at 300 for approx 15 minutes for small shapes, a little longer for larger shapes.
* I went ahead and sprinkled mine with sanding sugar BEFORE they went in the oven.
